Did you know that anti-oxidants are found in colors? Any naturally colored food has anti-oxidants. Grapes, kale, eggplant – the darker and denser the more anti-oxidants and nutrients. This July eat more Grapefruit!
Nutritional Benefits of Grapefruit are many. Packed with vitamins and anti-oxidants. Grapefruits are loaded with all kinds of vitamins (namely vitamins A, C, Calcium and Magnesium) Grapefruit also contain lycopene, an antioxidant pigment that’s found red fruits and Vegetables. Lycopene is llinked to reduction of prostate and breast cancer as well as cardiovascular disease. Naringenin is another antioxidant found in grapefruits. It’s actually what gives the grapefruit most of its flavor.

AVOCADO – GRAPEFRUIT SALAD with Ginger Miso Dressing
From Cafe Flora Cookbook.
1 red or pink Grapefruit
8 cups loosly packed Swiss Chard (remove stems)
3 tbsp raw sunflower seeds
2 tbsp light Miso
1/2 cup rice vinegar
2 tbsp minced, peeled fresh ginger
1 clove garlic
1/2 cup vegetable oil
Segment grapefruit , using a small serrated knife, remove peel and white membrane. Set grapefruit aside in a small bowl. Cut avocado in half lengthwise, remove pit and skin. Cut each half avocado into 1/4 inch slices. Wash and dry swiss chard leaves, remove center stem and tear leaves into bite size pieces.
Combine miso, vinegar, ginger, garlic and oil in a jar with 1/4 cup of water – Shake till smooth
Toss greens and grapefruit segments with 1/4 cup of dressing- arrange on plates and top with avocado slices (3-4) and sunflower seeds.
